Cheesy Meat-Stuffed Tortilla Roll / Lahmacun Roll-Up

Description

This savory, mouth-watering dish features a thin flatbread or tortilla spread with a seasoned minced meat mixture (reminiscent of Turkish lahmacun or a meat pizza topping), sprinkled with fresh green herbs, rolled up with plenty of cheese, and baked or pan-toasted until golden, gooey, and crispy on the outside.

Ingredients

  • 4 large flour tortillas or thin flatbreads (like lavash)

  • 1/2 pound (250g) ground beef or lamb

  • 1 small onion, finely grated or minced

  • 1 medium tomato, finely diced or blended into a paste

  • 2 cloves garlic, minced

  • 1 tablespoon tomato paste

  • 1 teaspoon paprika

  • 1/2 teaspoon ground cumin

  • Salt and freshly ground black pepper, to taste

  • 1 cup shredded mozzarella or cheddar cheese

  • 1/4 cup fresh parsley or green onions, chopped

  • 1 tablespoon olive oil or melted butter (for brushing)

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. Make the Meat Filling: In a bowl, combine the ground meat, minced onion, diced tomato, garlic, tomato paste, paprika, cumin, salt, and pepper. Mix thoroughly until well combined.

  3. Assemble the Rolls: Lay each tortilla flat on a clean surface. Spread a thin, even layer of the raw meat mixture across the entire surface of each tortilla. Sprinkle chopped parsley or green onions and a generous handful of shredded cheese over the meat.

  4. Roll Up: Carefully roll each tortilla tightly into a log shape, just like a burrito or pinwheel roll.

  5. Bake or Toast: Place the rolls seam-side down on the prepared baking sheet. Brush the tops lightly with olive oil or melted butter for extra crispiness. Bake for 20 to 25 minutes, or until the meat is fully cooked through and the cheese is melted and bubbly.

  6. Slice and Serve: Let cool for a few minutes, then slice diagonally into thick, gorgeous portions to show off the cheesy, savory filling.
