Ingredients

- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Creamy Cheese Sauce
- 1 cup shredded cheddar cheese
- 1/2 cup Monterey Jack cheese
- 1/2 cup heavy cream
- 2 tbsp cream cheese
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Pinch of chili flakes, optional
For Serving
- 8–10 crispy taco shells
- 1 tomato, diced
- 2 tbsp fresh cilantro, chopped
- Extra shredded cheese, optional
- Lime wedges, optional
Instructions
- Cook the beef: Heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2–3 minutes. Add garlic and cook for another 30 seconds.
- Add the ground beef and cook until browned, breaking it apart with a wooden spoon.
- Drain excess grease if necessary. Stir in chili powder, paprika, cumin, oregano, salt, and black pepper. Cook for another 2–3 minutes so the spices coat the beef.
- Prepare the cheese sauce: Reduce the heat to low. Add heavy cream and cream cheese to a small saucepan. Stir until smooth and warmed through.
- Gradually add cheddar and Monterey Jack cheese, stirring continuously until melted and creamy. Add paprika, garlic powder, and chili flakes if desired.
- Warm the taco shells: Heat the taco shells according to the package instructions until crisp and warm.
- Assemble: Fill each taco shell generously with seasoned ground beef. Spoon the creamy cheese sauce over the beef.
- Top with diced tomatoes and fresh cilantro. Add extra cheese or a squeeze of lime if desired.
- Serve immediately while the shells are crispy and the cheese sauce is warm and creamy.
