Ingredients
- 2 lbs beef chuck or stew meat, cut into bite-sized pieces
- 1 small onion, diced
- 3 cloves garlic, minced
- ½ cup beef broth
- ¼ cup soy sauce
- ⅓ cup brown sugar
- 2 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 1 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp onion powder
- 1 tbsp cornstarch
- 2 tbsp cold water
- Fresh parsley, for garnish
Instructions
- Pat the beef pieces dry and season with salt, pepper, smoked paprika, and onion powder.
- Heat olive oil in a large skillet over medium-high heat. Quickly sear the beef in batches until browned on the outside.
- Transfer the beef to your slow cooker.
- Add the diced onion and minced garlic.
- In a bowl, whisk together beef broth, soy sauce, brown sugar, Worcestershire sauce, and tomato paste.
- Pour the sauce over the beef and gently stir.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is fork-tender.
- Mix cornstarch with cold water to make a slurry.
- Stir the slurry into the slow cooker during the final 20–30 minutes of cooking.
- For an extra caramelized finish, transfer the cooked beef to a baking sheet and broil for 2–4 minutes, watching carefully, until the edges become glossy and caramelized.
- Garnish with fresh parsley and serve hot.
