Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup green beans, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 5–6 cups beef broth
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt, or to taste
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Brown the ground beef in a skillet over medium heat. Add the diced onion and cook until softened. Drain excess grease.
  2. Transfer the beef and onion to a slow cooker.
  3. Add potatoes, carrots, peas, corn, and green beans.
  4. Stir in diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, paprika, salt, and black pepper.
  5. Add the bay leaf and stir everything together.
  6. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the potatoes and carrots are tender.
  7. Remove the bay leaf and taste the soup. Adjust the seasoning if needed.
  8. Stir in fresh parsley just before serving.
  9. Ladle into bowls and serve hot with crusty bread or crackers.

For an extra-rich flavor, sprinkle each bowl with fresh parsley and a little grated Parmesan. A warm slice of crusty bread makes the perfect side.
