Marinated Cucumber Salad
Ingredients
-
3 to 4 English cucumbers (sliced thin into rounds)
-
1/2 red onion (thinly sliced, optional)
-
2 tbsp white vinegar or apple cider vinegar
-
1 tbsp olive oil
-
1 tbsp sugar or honey
-
1 tsp salt and black pepper
-
1 tbsp dried dill or fresh dill (chopped)
-
1/2 tsp garlic powder or minced fresh garlic
-
A pinch of red pepper flakes (optional for heat)
Instructions
-
Prep the Cucumbers: Slice the cucumbers into even rounds and place them into a large bowl or storage container.
-
Make the Dressing: In a small bowl, whisk together the vinegar, olive oil, sugar (or honey), salt, black pepper, dill, garlic, and red pepper flakes until the sugar dissolves.
-
Combine & Marinate: Pour the dressing evenly over the sliced cucumbers. Toss well to ensure every slice is coated.
-
Chill: Cover the container with a lid and refrigerate for at least 30 minutes to let the flavors meld and the cucumbers absorb the marinade.
-
Serve: Give it a quick toss before serving cold as a refreshing side dish!
