Marinated Cucumber Salad

Marinated Cucumber Salad

Ingredients

  • 3 to 4 English cucumbers (sliced thin into rounds)

  • 1/2 red onion (thinly sliced, optional)

  • 2 tbsp white vinegar or apple cider vinegar

  • 1 tbsp olive oil

  • 1 tbsp sugar or honey

  • 1 tsp salt and black pepper

  • 1 tbsp dried dill or fresh dill (chopped)

  • 1/2 tsp garlic powder or minced fresh garlic

  • A pinch of red pepper flakes (optional for heat)

Instructions

  1. Prep the Cucumbers: Slice the cucumbers into even rounds and place them into a large bowl or storage container.

  2. Make the Dressing: In a small bowl, whisk together the vinegar, olive oil, sugar (or honey), salt, black pepper, dill, garlic, and red pepper flakes until the sugar dissolves.

  3. Combine & Marinate: Pour the dressing evenly over the sliced cucumbers. Toss well to ensure every slice is coated.

  4. Chill: Cover the container with a lid and refrigerate for at least 30 minutes to let the flavors meld and the cucumbers absorb the marinade.

  5. Serve: Give it a quick toss before serving cold as a refreshing side dish!
