🥮 Classic Fruit & Apricot Cake

Ingredients

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup unsalted butter (softened)

  • 3/4 cup sugar

  • 3 large eggs

  • 1/2 cup milk or yogurt

  • 1 cup dried fruits (raisins, sultanas, and chopped dried apricots)

  • 1 tsp vanilla extract

Instructions

  1. Preheat & Prep: Preheat your oven to 180°C (350°F). Grease and flour a round cake pan.

  2. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Toss the dried fruits with a tablespoon of this flour mixture to prevent them from sinking.

  3. Cream Butter & Sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.

  4. Mix Batter: Alternately add the dry ingredients and the milk to the butter mixture, mixing gently just until combined. Fold in the floured dried fruits and apricots.

  5. Bake: Pour the batter evenly into the prepared cake pan. Bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool & Slice: Let the cake cool completely in the pan before turning it out onto a wooden board. Slice into neat portions and serve!
