Crispy Golden Potato Patties

These delicious potato patties feature a wonderfully crispy, seasoned outer crust while remaining soft, fluffy, and savory on the inside. Garnished with fresh herbs, they make a fantastic side dish, appetizer, or snack.

Ingredients

  • 4 large russet potatoes, peeled, boiled, and mashed

  • 2 tablespoons butter or milk (for richness)

  • 1/4 cup green onions or chives, finely chopped

  • 1/3 cup all-purpose flour (plus extra for dredging)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and black pepper to taste

  • 2-3 tablespoons olive oil or butter (for pan-frying)

  • Fresh parsley, chopped (for garnish)

Step-by-Step Instructions

  1. Prepare the Potatoes: Boil the peeled potatoes until fork-tender. Drain thoroughly, then mash them until smooth with a bit of butter or milk. Let them cool slightly.

  2. Mix the Ingredients: Stir in the chopped green onions, garlic powder, onion powder, salt, pepper, and flour into the mashed potatoes until a workable dough forms.

  3. Form the Patties: Divide the mixture into equal portions. Roll them into balls and gently flatten them into round or oval patties (about 1/2-inch thick).

  4. Pan-Fry: Heat olive oil or butter in a large skillet over medium-high heat. Place the patties in the pan without overcrowding.

  5. Crisp to Perfection: Fry for 3 to 4 minutes on each side until deeply golden brown and wonderfully crispy.

  6. Garnish and Serve: Transfer to a paper-towel-lined plate to drain excess oil, sprinkle with fresh chopped parsley, and serve warm!
