Sweet and Sticky Garlic Glazed Cauliflower Bites

These crispy, flavor-packed cauliflower florets are roasted to tender perfection and tossed in a rich, sticky, savory-sweet glaze. Garnished with fresh herbs and a squeeze of lemon, they make an incredible vegetarian appetizer, snack, or side dish.

Ingredients

For the Cauliflower:

  • 1 large head of cauliflower, cut into bite-sized florets

  • 2 tablespoons olive oil

  • 1/2 teaspoon garlic powder

  • Salt and black pepper to taste

For the Sticky Glaze:

  • 1/3 cup sweet chili sauce or honey

  • 2 tablespoons soy sauce or tamari

  • 1 tablespoon rice vinegar

  • 2 cloves garlic, minced

  • 1 teaspoon fresh ginger, grated

  • 1 teaspoon sriracha (optional, for a little heat)

  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

For Garnish:

  • Fresh parsley or cilantro, chopped

  • Lemon wedges

Step-by-Step Instructions

  1. Roast the Cauliflower: Preheat your oven to 400°F (200°C). Toss the cauliflower florets with olive oil, garlic powder, salt, and pepper on a baking sheet. Spread them in a single layer and roast for 20 to 25 minutes until tender and lightly charred at the edges.

  2. Make the Glaze: In a small saucepan over medium heat, combine the sweet chili sauce, soy sauce, rice vinegar, minced garlic, grated ginger, and sriracha. Bring to a simmer.

  3. Thicken the Sauce: Stir in the cornstarch slurry. Cook for 1 to 2 minutes, stirring constantly, until the sauce thickens into a glossy, sticky glaze.

  4. Toss and Coat: Transfer the roasted cauliflower to a large bowl, pour the sticky glaze over top, and gently toss until every piece is evenly coated.

  5. Serve: Garnish with fresh chopped parsley and serve warm with lemon wedges on the side!
