Ingredients

Base: 1 1/2 cups rolled oats (or quick oats)

Binder: 1/2 cup natural peanut butter or almond butter

Sweetener: 1/3 cup honey or pure maple syrup

Seeds & Nuts: 1/2 cup mixed seeds (pumpkin seeds, sunflower seeds, sesame seeds) and chopped nuts

Extras: 1/4 cup dried cranberries or raisins, 1 teaspoon vanilla extract, and a pinch of salt
Instructions

Mix Wet Ingredients: In a large mixing bowl, combine the peanut butter, honey, and vanilla extract until smooth and well blended.

Add Dry Ingredients: Stir in the rolled oats, mixed seeds, chopped nuts, dried fruit, and a pinch of salt. Mix thoroughly until a thick, sticky dough forms.

Shape: Scoop out portions of the dough and firmly press them into sturdy, flattened cookie shapes using your hands (since these don’t spread much while baking).

Bake: Arrange the cookies on a lined baking sheet. Bake at 175°C (350°F) for 12 to 15 minutes, or until the edges turn lightly golden and toasted.
