Crustless Spinach and Cheese Quiche

Crustless Spinach and Cheese Quiche

Description

This rich, sliceable, and high-protein quiche features a fluffy egg and cottage cheese base studded with tender spinach and baked until golden-brown. Without the need for a pastry crust, it comes together easily for a wholesome breakfast, brunch, or light dinner.

Ingredients

  • 5 large eggs

  • 1 cup cottage cheese (full-fat or low-fat)

  • 1 cup shredded cheddar, mozzarella, or Swiss cheese

  • 1 cup fresh spinach (chopped, or thawed and thoroughly squeezed if using frozen)

  • 1/4 cup all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 cup butter, melted

  • 1/2 teaspoon garlic powder

  • Salt and freshly ground black pepper, to taste

  • 1 tablespoon chopped fresh herbs (like parsley or chives, for the top)

Step-by-Step Instructions

  1. Prep the Oven and Pan: Preheat your oven to 400°F (200°C). Generously grease a 9-inch pie plate or round baking dish with non-stick cooking spray or butter.

  2. Blend the Base: In a large mixing bowl, beat the eggs well, then whisk in the cottage cheese until mostly smooth.

  3. Add Dry Ingredients and Flavor: Whisk in the flour, baking powder, garlic powder, salt, and black pepper. Stir in the melted butter.

  4. Incorporate Cheese and Spinach: Fold in the shredded cheese and the chopped spinach until evenly distributed throughout the batter.

  5. Pour and Bake: Pour the mixture into your prepared baking dish. Bake at 400°F for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for another 25 to 30 minutes, or until the top is deeply golden-brown and the center is set.

  6. Cool and Serve: Let the quiche rest for about 10 minutes so it firms up before slicing into wedges. Garnish with fresh herbs on top.
