A fun and quirky twist on traditional pickled vegetables, these “Frog Balls” are actually crunchy, tangy, and spicy pickled Brussels sprouts. Packed with garlic, dill, and red pepper flakes, they make a fantastic, bold snack or a unique addition to a charcuterie board.

2 lbs Brussels sprouts

2 1/2 cups white vinegar

2 tbsp pickling salt

1 tbsp sugar

4 garlic cloves, peeled

1 tsp dill seeds

Instructions

Prep the Brussels Sprouts: Wash the Brussels sprouts thoroughly, trim the stem ends, and remove any yellow or damaged outer leaves.

Make the Brine: In a medium saucepan, combine the white vinegar, water, pickling salt, and sugar. Bring the mixture to a boil over medium-high heat, stirring until the salt and sugar are completely dissolved.

Pack the Jars: Divide the peeled garlic cloves, dill seeds, and red pepper flakes evenly into clean glass canning jars. Pack the prepared Brussels sprouts tightly into the jars.

Pour the Brine: Carefully pour the hot vinegar brine over the Brussels sprouts, ensuring they are completely submerged and leaving a small amount of headspace at the top of the jars.

Seal and Cool: Wipe the rims clean, seal the jars tightly with lids, and let them cool to room temperature.

Store and Chill: Place the jars in the refrigerator. For the best flavor, let them pickle for at least 1 to 2 weeks before diving in!
