Ingredients
-
For the Soup Base:
-
1 lb lean ground beef
-
1 medium yellow onion, diced
-
2 cloves garlic, minced
-
3 cups chicken or beef broth
-
2 medium potatoes, peeled and diced (optional, or diced tomatoes with green chiles)
-
1 cup diced tomatoes
-
2 cups shredded cheddar cheese
-
1 cup heavy cream (or whole milk)
-
2 tbsp butter
-
2 tbsp all-purpose flour (optional, for a thicker base)
-
Salt and black pepper to taste
-
Fresh parsley or green onions, chopped (for garnish)
-
Instructions
-
Cook the Beef and Aromatics: In a large pot or Dutch oven over medium heat, cook the ground beef and diced onion until the meat is fully browned and the onions are translucent. Drain any excess grease. Add the minced garlic and cook for about 1 minute until fragrant.
-
Build the Broth: Stir in the broth, diced tomatoes, and diced potatoes (if using). Bring the mixture to a boil, then reduce heat, cover, and simmer for 10-15 minutes until the potatoes are tender.
-
Thicken (Optional): If you prefer a thicker soup, melt the butter in a small skillet, stir in the flour to form a paste, and whisk it into the simmering soup until thickened.
-
Add Dairy and Cheese: Reduce the heat to low. Stir in the heavy cream and slowly add the shredded cheddar cheese, stirring continuously until the cheese is completely melted and the soup is smooth and creamy.
-
Season and Serve: Taste and season with salt and pepper as needed. Ladle into bowls, garnish with fresh parsley or green onions, and serve hot!
