Bacon Mushroom Cheeseburger Meatloaf
A juicy, savory meatloaf loaded with crispy bacon, sautéed mushrooms, and melted cheese, then finished with a rich, flavorful glaze. It’s pure comfort food and makes an impressive family dinner!

For the Meatloaf
- 2 lb ground beef
- 6 slices bacon, cooked and crumbled
- 1 cup mushrooms, finely chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 large egg
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
For the Topping
- 1 cup shredded mozzarella or cheddar
- ½ cup sliced mushrooms
- 3–4 slices cooked bacon, crumbled
- 2 tbsp chopped fresh parsley
Glaze
- ¼ cup ketchup
- 2 tbsp BBQ sauce
- 1 tbsp brown sugar
- 1 tsp Worcestershire sauce
👩🍳 Instructions
- Prepare the vegetables: Cook the chopped mushrooms and onion in a skillet over medium heat for 5–6 minutes. Add garlic and cook for another minute. Let cool slightly.
- Make the meat mixture: In a large bowl, combine ground beef, cooked mushroom mixture, crumbled bacon, egg, Parmesan, breadcrumbs, ketchup, Worcestershire sauce, salt, pepper, and Italian seasoning.
- Add the cheese: Gently fold in the shredded cheddar, being careful not to overmix.
- Shape: Place the mixture into a loaf pan or shape it into a loaf on a parchment-lined baking sheet.
- Make the glaze: Stir ketchup, BBQ sauce, brown sugar, and Worcestershire sauce together. Spread about half over the meatloaf.
- Bake: Bake at 375°F (190°C) for about 45–55 minutes.
- Add the topping: Remove from the oven and cover with shredded cheese, sautéed or sliced mushrooms, and bacon.
- Finish baking: Return to the oven for 10–15 minutes, until the cheese is melted and the meatloaf reaches 160°F (71°C) internally.
- Rest: Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley.
