🛒 Ingredients
For the Meatloaf
- 2 lb ground beef
- 8 slices bacon, cooked and crumbled
- 1 cup mushrooms, finely chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 large eggs
- ½ cup breadcrumbs
- ½ cup milk
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
Cheese Filling
- 6–8 slices Swiss cheese
- ½ cup shredded Swiss cheese, optional
Glaze
- ½ cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp Dijon mustard

- Cook the bacon: Fry the bacon until crispy. Drain on paper towels, crumble, and set aside.
- Sauté the vegetables: In the same skillet, add the mushrooms and onion. Cook for 5–7 minutes until softened and most of the moisture has evaporated. Add garlic and cook for 30 seconds. Let cool.
- Make the meat mixture: In a large bowl, combine ground beef, eggs, breadcrumbs, milk, Worcestershire sauce, salt, pepper, Italian seasoning, and smoked paprika. Gently mix in the bacon and cooled mushroom mixture.
- Add the cheese: Place half of the meat mixture onto parchment paper and shape it into a rectangle. Arrange Swiss cheese down the center, leaving a border around the edges.
- Seal the loaf: Cover with the remaining meat mixture and firmly pinch the edges closed so the cheese stays inside. Shape into a loaf and place in a loaf pan or on a lined baking sheet.
- Prepare the glaze: Mix ketchup, Worcestershire sauce, brown sugar, and Dijon mustard.
- Bake: Spread half of the glaze over the meatloaf. Bake at 375°F (190°C) for 50–60 minutes.
- Finish: Brush with the remaining glaze and bake for another 10–15 minutes, until the internal temperature reaches 160°F (71°C).
- Rest and serve: Let the meatloaf rest for 10–15 minutes before slicing. Garnish with fresh parsley if desired.
