Slow-Cooker Honey Garlic Glazed Beef Roast
Tender, juicy beef roast slow-cooked until it practically falls apart, then coated in a sweet, savory honey garlic glaze. This is an easy comfort-food dinner that fills the kitchen with an incredible aroma!

For the Beef
- 3–4 lb beef chuck roast
- 1½ tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
- 1 medium onion, sliced
- 5 cloves garlic, minced
- 1 cup beef broth
- ⅓ cup honey
- ¼ cup low-sodium soy sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp apple cider vinegar
- 1 tsp dried thyme
- ½ tsp dried rosemary
For the Glaze
- 2 tbsp honey
- 2 tbsp of the cooking juices
- 1 tbsp soy sauce
- 1 tbsp minced garlic
- 1 tsp cornstarch mixed with 2 tbsp cold water

- Season the roast: Pat the beef dry and season generously with salt, pepper, and paprika.
- Sear the beef: Heat olive oil in a large skillet over medium-high heat. Sear the roast for 2–3 minutes per side until nicely browned.
- Build the slow cooker: Place sliced onion and minced garlic in the bottom of the slow cooker. Set the seared roast on top.
- Add the sauce: Whisk together beef broth, honey, soy sauce, Worcestershire sauce, apple cider vinegar, thyme, and rosemary. Pour around the roast.
- Slow cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is very tender.
- Make the glaze: Transfer the roast to a plate and tent loosely with foil. Pour about ½ cup of the cooking liquid into a small saucepan. Add honey, soy sauce, and garlic. Bring to a gentle simmer.
- Thicken: Stir in the cornstarch slurry and cook for 1–2 minutes until the glaze becomes glossy and slightly thick.
- Glaze the roast: Brush the warm honey-garlic glaze generously over the beef. For an extra caramelized finish, place the roast under the broiler for 2–3 minutes, watching closely.
- Rest and serve: Let the roast rest for about 10 minutes, then slice or shred. Spoon extra glaze and cooking juices over the top.
