Step-by-Step Instructions

Prep the Filling: In a skillet over medium heat, sauté the minced garlic and chopped fresh spinach until the spinach is wilted. Remove from heat and stir in the softened cream cheese and Parmesan cheese until melted together into a creamy spinach mixture.

Cut the Pockets: Pat the salmon fillets dry with paper towels. Using a sharp knife, carefully cut a pocket into the thick side of each salmon fillet, making sure not to cut all the way through to the other side.
