Slow Cooker Cabbage & Ground Beef Soup
A hearty, cozy one-pot slow cooker soup packed with tender cabbage, seasoned ground beef, tomatoes, carrots, and peppers. It’s rich, comforting, and perfect for an easy family dinner.
🛒 Ingredients
- 1½ lb ground beef
- ½ large head green cabbage, chopped
- 1 medium onion, diced
- 2 carrots, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp Worcestershire sauce
- 2 tbsp fresh parsley, chopped
👩🍳 Instructions
- Brown the beef: Cook the ground beef and onion in a skillet over medium-high heat until browned. Drain excess grease.
- Add to slow cooker: Transfer the beef and onion to the slow cooker. Add cabbage, carrots, bell pepper, and garlic.
- Add tomatoes and broth: Stir in diced tomatoes, tomato sauce, tomato paste, beef broth, Worcestershire sauce, paprika, Italian seasoning, smoked paprika, salt, and pepper.
- Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the cabbage and carrots are tender.
- Finish: Stir well and taste for seasoning. Add more salt or pepper if needed.
- Serve: Ladle into bowls and garnish generously with fresh parsley.
