Finely grate the carrot and zucchini. Tip: Squeeze the grated zucchini in a clean kitchen towel to remove excess liquid so the mixture doesn’t get too watery.

In a large mixing bowl (as shown in the top image), combine the grated carrot, squeezed zucchini, grated cheese, chopped green onions, and eggs.
