Ingredients

  • Carrot: 1 medium (finely grated)

  • Zucchini: 1 medium (finely grated and excess moisture squeezed out)

  • Cheese: ½ cup (grated mozzarella or cheddar)

  • Eggs: 2 whole

  • Green onions/Scallions: 3-4 (finely chopped)

  • All-purpose flour: 3 to 4 tablespoons (enough to bind the mixture)

  • Salt and black pepper: To taste

  • Oil or butter: For pan-frying

Step-by-Step Instructions

  1. Prep the Vegetables:

    • Finely grate the carrot and zucchini. Tip: Squeeze the grated zucchini in a clean kitchen towel to remove excess liquid so the mixture doesn’t get too watery.

  2. Combine Ingredients:

    • In a large mixing bowl (as shown in the top image), combine the grated carrot, squeezed zucchini, grated cheese, chopped green onions, and eggs.

    • Season with salt and black pepper to taste.

  3. Add Flour:

    • Sprinkle in the all-purpose flour and mix everything thoroughly with a fork or spoon until a cohesive, thick batter is formed.

  4. Pan-Fry:

    • Heat a tablespoon of oil or butter in a skillet over medium heat.

    • Scoop portions of the mixture and shape them into neat logs or small patties, placing them into the hot skillet.

    • Cook for 3 to 4 minutes on each side until the exterior turns deeply golden-brown and crispy, and the inside is fully cooked through.

  5. Serve:

    • Transfer to a plate lined with a paper towel to remove excess oil. Serve warm on their own or with your favorite dipping sauce!
