2 lbs salted or unsalted dry-roasted peanuts

24 oz milk chocolate or semi-sweet chocolate chips (or melting wafers)

12 oz white chocolate chips or almond bark (optional, for extra richness)

1 tbsp coconut oil or vegetable shortening (helps smooth out the melting chocolate)
Instructions

Prep the Pans: Line a couple of large baking sheets or trays with parchment paper or wax paper. Set aside.

Melt the Chocolate: In a large microwave-safe bowl or a double boiler, combine the chocolate chips (and white chocolate/almond bark if using) along with the coconut oil or shortening. Microwave in 30-second intervals, stirring thoroughly after each interval, until the chocolate is completely melted and smooth.

Add the Peanuts: Pour the dry-roasted peanuts directly into the bowl with the warm melted chocolate. Stir gently with a spatula until every single peanut is completely coated in chocolate.

Scoop the Clusters: Using a spoon or a small cookie scoop, drop rounded mounds of the chocolate-peanut mixture onto the prepared parchment-lined baking sheets.

Set and Cool: Allow the clusters to sit at room temperature until hardened (about 1 to 2 hours). You can also pop the baking sheets into the refrigerator for 15-20 minutes to speed up the setting process.
