🛒 Ingredients

For the Meatloaf

  • 2 lbs ground beef
  • 8–10 slices bacon
  • 1 small onion, finely diced
  • 8 oz mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika

For the Filling

  • 1 cup shredded Swiss cheese
  • ½ cup sautéed mushrooms
  • ¼ cup shredded mozzarella, optional

Glaze

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard

👩‍🍳 Instructions

1. Prepare the Mushrooms

Heat a skillet over medium heat. Add the chopped mushrooms and cook for 5–7 minutes, stirring occasionally, until their moisture has cooked away. Add the garlic and cook for another 30 seconds. Set aside to cool.

2. Make the Meat Mixture

Preheat oven to 375°F (190°C).

In a large bowl, combine the ground beef, onion, egg, breadcrumbs, milk, Worcestershire sauce, salt, pepper, garlic powder, onion powder, and smoked paprika. Mix gently until just combined.

3. Create the Cheesy Center

Place a large sheet of parchment paper on your work surface. Spread about ⅔ of the meat mixture into a rectangle.

Sprinkle the center with Swiss cheese and the sautéed mushrooms, leaving a border around the edges.

Carefully place the remaining meat mixture over the filling and seal the edges completely so the cheese stays inside.

Shape into a loaf.

4. Wrap with Bacon

Lay bacon slices across the loaf, slightly overlapping each piece. Tuck the bacon underneath the meatloaf to keep everything secure.

5. Add the Glaze

Whisk together ketchup, brown sugar, Worcestershire sauce, and mustard. Brush about half of the glaze over the bacon-wrapped meatloaf.

6. Bake

Place the meatloaf on a foil-lined baking sheet or in a loaf pan.

Bake for approximately 55–70 minutes, brushing with the remaining glaze during the final 15 minutes.

Cook until the center reaches 160°F (71°C).

For extra-crispy bacon, broil for 1–3 minutes at the end, watching carefully.

7. Rest & Slice

Remove from the oven and let the meatloaf rest for 10–15 minutes before slicing. This helps the juices settle and keeps the cheesy filling from spilling out immediately.

🔥 Pro Tips

  • Use 80/20 ground beef for a moist, flavorful meatloaf.
  • Cook mushrooms before adding them to prevent excess moisture from making the meatloaf soggy.
  • Don’t overmix the beef mixture.
  • Seal the edges of the meatloaf carefully around the cheese.
  • For even crispier bacon, place the loaf on a rack over a baking sheet.
  • Try adding caramelized onions or a little Dijon mustard to the filling for extra flavor.

🍽️ What to Serve With It

Pair this meatloaf with garlic mashed potatoes, roasted broccoli, green beans, cauliflower mash, or a crisp garden salad. The rich mushroom-Swiss filling also makes it delicious with sautéed vegetables.
