Ingredients

  • Base:

    • 1.5 cups rolled oats

    • 1 cup cottage cheese

    • 2 large eggs

    • $\frac{1}{3}$ cup maple syrup or honey (optional sweetener)

    • 1 teaspoon baking powder

    • 1 teaspoon vanilla extract

  • Mix-in:

    • $\frac{1}{2}$ to $\frac{3}{4}$ cup fresh blueberries

Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C) and generously grease a mini muffin tin (or use mini paper liners).

  2. Blend Ingredients: Add the rolled oats, cottage cheese, eggs, sweetener (if using), baking powder, and vanilla extract into a high-powered blender. Blend on high until the mixture is completely smooth and the oats are fully pulverized.

  3. Fold in Blueberries: Pour the blended batter into a mixing bowl and gently fold in the fresh blueberries by hand.

  4. Fill Tin: Spoon or pour the batter evenly into the mini muffin cups, filling each nearly to the top.

  5. Bake: Bake in the preheated oven for 12 to 15 minutes, or until the tops are set and lightly golden brown.

  6. Cool & Serve: Let them cool in the pan for a few minutes before transferring them to a wire rack. Serve warm or store in an airtight container.
