Ingredients

  • Meatloaf:

    • 2 lbs ground beef

    • 1 cup breadcrumbs (or panko)

    • 1/2 cup onion (finely diced)

    • 2 large eggs

    • 1/3 cup milk

    • 2 cloves garlic (minced)

    • 1 tsp salt and 1/2 tsp black pepper

    • 1 tsp Worcestershire sauce

  • Meatloaf Glaze:

    • 1/2 cup ketchup

    • 1 tbsp brown sugar

    • 1 tsp mustard

  • Sides:

    • 3–4 large russet potatoes (peeled and quartered)

    • 1/4 cup butter (divided)

    • 1/4 cup milk or heavy cream (for the potatoes)

    • 2 cups sweet corn (canned or frozen, heated)

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease a baking dish or a loaf pan.

  2. Mix the Meatloaf: In a large bowl, combine the ground beef, breadcrumbs, diced onion, eggs, milk, garlic, Worcestershire sauce, salt, and pepper. Mix gently until just incorporated (do not overmix, or the meatloaf will become dense).

  3. Shape and Glaze: Shape the meat mixture into a loaf shape and place it in the prepared baking dish. In a small bowl, mix the ketchup, brown sugar, and mustard, then spread it evenly over the top and sides of the meatloaf.

  4. Bake: Bake in the preheated oven for about 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for 10 minutes before slicing.

  5. Make the Mashed Potatoes: While the meatloaf bakes, boil the quartered potatoes in salted water until fork-tender (about 15 minutes). Drain well, then mash with butter, milk, salt, and pepper until smooth and creamy.
