This is a fresh, flavorful, and protein-packed Greek-inspired dish featuring tender, pan-seared chicken meatballs served over a bed of greens, topped with a generous dollop of creamy homemade tzatziki sauce, fresh herbs, and crisp cucumber slices.

Ingredients

  • Chicken Meatballs:

    • 1 lb ground chicken

    • 1/3 cup breadcrumbs

    • 1 large egg

    • 2 cloves garlic (minced)

    • 1 tbsp fresh parsley or dill (chopped)

    • Salt and black pepper to taste

    • 1 tbsp olive oil (for cooking)

  • Tzatziki Sauce:

    • 1/2 cup Greek yogurt

    • 1/4 cup cucumber (grated and squeezed dry)

    • 1 clove garlic (minced)

    • 1 tbsp fresh lemon juice

    • Fresh dill (chopped, for topping)

  • Salad Base & Garnish:

    • Fresh salad greens or chopped lettuce

    • Cucumbers (sliced into rounds)

    • Fresh herbs (dill and parsley for garnish)

Instructions

  1. Make the Meatballs: In a large bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, fresh herbs, salt, and pepper. Mix gently until just combined, then roll into bite-sized meatballs.

  2. Cook the Meatballs: Heat olive oil in a skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through (about 8–10 minutes).

  3. Prepare the Tzatziki: In a small bowl, whisk together the Greek yogurt, grated cucumber, minced garlic, and lemon juice. Season with a pinch of salt.

  4. Assemble the Bowl: Lay down a bed of fresh greens and cucumber slices in a serving bowl. Top with the warm, golden chicken meatballs.

  5. Add Sauce and Garnish: Spoon a generous amount of homemade tzatziki sauce right over the meatballs and garnish with plenty of fresh chopped dill. Enjoy warm!
