STUFFING BALLS

Ingredients:

4 cups whole-grain bread cubes (whole-wheat or whole-grain)
1 cup chopped celery
1 cup chopped onion
1 cup chopped mushrooms
1 cup low-sodium chicken or vegetable broth
2 teaspoons olive oil
1 teaspoon dried sage
1 teaspoon dried thyme
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
Cooking spray

Instructions:

Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onions, celery, and mushrooms. Sauté until they become tender, about 5-7 minutes.
Stir in the dried sage, dried thyme, salt, and black pepper. Cook for another minute or so to allow the flavors to meld.
In a large mixing bowl, combine the sautéed vegetable mixture with the bread cubes. Pour the chicken or vegetable broth over the mixture and stir until the bread is well-moistened. Add more broth if needed to reach your desired consistency.
Form the mixture into small stuffing balls, using your hands to shape them.
Place the stuffing balls on a baking sheet sprayed with cooking spray.
Bake in the preheated oven for 20-25 minutes or until the stuffing balls are lightly browned and crispy on the outside.
Serve the Weight Watchers stuffing balls as a side dish with your favorite meal.
