An easy-to-prepare air fryer fakeaway recipe for chicken fried rice. Better than your local takeaway!

Ingredients

  • 2 skinless chicken breasts, diced
  • Pinch of salt and pepper
  • 1 teaspoon mild curry powder
  • 250g pack of microwave long-grain rice
  • 1 tablespoon hoisin sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Chinese five spice
  • 1/2 teaspoon lazy ginger
  • 1/2 red onion, finely diced
  • 1/2 a carrot, grated
  • 1 tin of garden peas, drained (alternatively use a handful of mixed frozen vegetables)

Instructions

  1. Coat the diced chicken in the curry powder and season with salt and pepper.
  2. Add to the air fryer for 7 minutes at 200 degrees
  3. Add the microwave rice to a bowl and add the hoisin, soy, garlic, five spice, ginger, onion, carrot and peas and mix well.
  4. Once the chicken has cooked, remove from the air fryer, then add the rice mixture on the bottom, then add the diced chicken on top.
  5. Cook for a further 8 minutes on 200 degrees
