Air Fryer Peach Cobbler


  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella cheese, sliced or diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • Balsamic glaze (optional, for drizzling)


  1. Preheat your air fryer to 375°F (190°C).

  2. In a bowl, combine the halved cherry tomatoes, fresh mozzarella, chopped basil, minced garlic, and olive oil. Season with salt and pepper to taste. Toss the ingredients to combine, ensuring the mixture is well coated with the olive oil.
  3. Butterfly the chicken breasts by slicing them horizontally, leaving one edge intact so you can open them like a book. This will help the chicken cook more evenly and quickly in the air fryer.
  4. Place a generous spoonful of the Caprese mixture inside each chicken breast. Fold the chicken over to enclose the filling. Use toothpicks to secure the chicken if necessary.
  5. Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the stuffed chicken breasts in the basket, making sure they are not touching each other.
  6. Air fry the chicken at 375°F (190°C) for about 20-25 minutes, flipping the chicken halfway through the cooking time. The exact cooking time may vary depending on the thickness of your chicken breasts and the specific model of your air fryer. The chicken is done when it reaches an internal temperature of 165°F (74°C) and is golden brown on the outside.
  7. Once the chicken is done, remove it from the air fryer and let it rest for a few minutes before serving.
  8. Drizzle with balsamic glaze, if desired, before serving. The balsamic glaze adds a sweet and tangy flavor that complements the Caprese filling.
