Air fryer Scotch eggs


Ingredients were, 500g pork sausage meat, 4 x medium eggs, Panko breadcrumbs, plain flour, 1 x beaten egg.

1, Boiled the eggs for 8 minutes then plunged in ice water, then peeled.

2, Divided the sausage meat into 4, flattened out between two sheets of clingfilm.

3, Moulded the sausage meat around the hard boiled egg to form an even ball, then place in fridge for 30 minutes.

4, Roll each egg in flour, then beaten egg and finally the breadcrumbs.

5, Cook in air fryer for 16 minutes, couple of squrts of spray oil, turning them at 8 minutes.
