Apple Spice Cake Recipe
Ingredients
For the Cake:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup unsweetened applesauce
1/2 cup vegetable oil
1 cup granulated sugar (or a sugar substitute for lower points)
3 large eggs
2 cups finely chopped apples (about 2 medium apples)
1 teaspoon vanilla extract
For the Topping (optional):
1/2 cup chopped walnuts or pecans
1/4 cup brown sugar
1 teaspoon ground cinnamon
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Mix Wet Ingredients: In a large bowl, combine the applesauce, oil, and sugar. Mix until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the chopped apples and vanilla extract.
Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour and Bake: Pour the batter into the prepared baking pan. If using, mix the walnuts, brown sugar, and cinnamon together and sprinkle over the top of the batter. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Cut into squares and serve.
SmartPoints Value
The SmartPoints value can vary based on ingredient substitutions, but here’s a general estimate:

Tips
For a lower SmartPoints version, consider using a sugar substitute and reducing the oil.
You can also add raisins or dried cranberries for extra flavor.
