Ingredients:
- 1 1/2 lbs (680g) beef sirloin or stew meat, cut into bite-sized pieces
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons all-purpose flour
- 1/4 cup water
- Chopped fresh parsley for garnish (optional)
Instructions:
- Season the beef pieces with salt and pepper to taste.
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
- Add the beef pieces to the skillet in a single layer, making sure not to overcrowd the pan. Cook the beef in batches if necessary. Brown the beef on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic to the skillet and cook for an additional 1 minute, until fragrant.
- Return the browned beef to the skillet with the onions and garlic.
- In a small bowl, mix together the beef broth and Worcestershire sauce. Pour the mixture over the beef in the skillet.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let the beef simmer for 1-1 1/2 hours, or until the beef is tender.
- In a small bowl, mix together the flour and water to create a slurry.
- Stir the flour slurry into the beef mixture in the skillet, stirring constantly. Cook for an additional 5-10 minutes, or until the gravy has thickened.
- Taste and adjust seasoning with salt and pepper if necessary.
- Serve the beef tips and gravy hot, garnished with chopped fresh parsley if desired.
