  • 1 cup strong black tea (such as English Breakfast or Assam)
  • 1 cup self-raising flour
  • 1/2 cup brown sugar
  • 1 egg, beaten
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon salt
  • Cooking spray or oil, for greasing


  1. In a bowl, combine the mixed dried fruit and the black tea. Let it soak for at least 1 hour, or preferably overnight, to allow the fruit to plump up.
