🥗 Breakfast Egg & Veggie Bowl


🧾 Ingredients

  • 3–4 eggs

  • 1 tbsp milk or cream (optional)

  • Salt & black pepper (to taste)

  • 1 tbsp olive oil or butter

Vegetables

  • 1 cup broccoli florets

  • 1 cup mushrooms (sliced)

  • 1 ripe avocado (sliced)

Optional

  • Garlic powder or paprika

  • Fresh parsley or chives


👩‍🍳 Instructions

1️⃣ Cook the broccoli

  • Steam or boil broccoli for 3–4 minutes until bright green

  • Drain and set aside


2️⃣ Sauté the mushrooms

  • Heat ½ tbsp oil in a pan over medium heat

  • Add mushrooms and a pinch of salt

  • Cook 5–6 minutes until golden and soft

  • Set aside


3️⃣ Scramble the eggs

  • Whisk eggs with milk, salt, and pepper

  • Heat remaining oil or butter in pan on low–medium heat

  • Add eggs and stir gently

  • Cook until soft and creamy (don’t overcook)


4️⃣ Assemble the bowl

  • Add scrambled eggs to the plate

  • Arrange broccoli, mushrooms, and avocado on the side

  • Sprinkle black pepper and herbs on top
