Ingredients
-
1 cup unsalted butter, softened
-
1/2 cup granulated sugar
-
2 cups all-purpose flour
-
1/4 tsp salt
-
1 bag (11 to 14 oz) soft caramel candies (unwrapped) or store-bought caramel sauce
-
2 tbsp heavy cream (if using caramels, for melting)
-
1 cup pecans, chopped
-
1 cup chocolate chunks or chopped chocolate squares
Instructions
-
Bake the Crust: Preheat your oven to 350°F (175°C) and grease a baking dish (such as a 9×13-inch glass pan). In a mixing bowl, cream together the softened butter and granulated sugar until smooth. Gradually mix in the flour and salt until a crumbly dough forms. Press the dough evenly into the bottom of the prepared pan. Bake for 15 to 20 minutes until lightly golden.
-
Prepare the Caramel Layer: If using unwrapped caramels, melt them in a saucepan over low heat with the heavy cream, stirring constantly until smooth and creamy. Pour the warm caramel evenly over the baked shortbread crust.
-
Add Toppings: Sprinkle the chopped pecans evenly over the layer of caramel. Scatter the chocolate chunks or squares across the top so they cover the surface evenly.
-
Set and Cool: Return the pan to the oven for 3 to 5 minutes just until the chocolate begins to soften and melt slightly into the pecans and caramel. Remove from the oven and let cool completely at room temperature, then chill in the refrigerator to set firmly before slicing into squares.
