Ingredients:

2 medium-sized potatoes (choose frying-appropriate potatoes, such as russet potatoes)

1 tablespoon vinegar (white or apple cider, according to your preference)
Salt to taste
Your choice of seasoning (optional): paprika, pepper, garlic powder, etc.

Instructions:

Start by thoroughly washing the potatoes to remove any dirt and drying them with a clean towel.
If you prefer a light oil coating for extra crispiness, you can brush the potato slices with olive oil using a kitchen brush. However, you can also skip this step if you want to further reduce the oil intake.
Slice the potatoes into very thin slices using a mandoline or a sharp knife. Try to make the slices as uniform as possible for even cooking.
Place the potato slices in a bowl and add the vinegar. Gently toss to coat the slices evenly with vinegar. Let them marinate for about 15 to 30 minutes to infuse the vinegar flavor.
Preheat your air fryer to approximately 180°C (350°F).
Arrange the potato slices in a single layer in the air fryer basket. You may need to cook the chips in multiple batches, depending on the size of your air fryer.
Sprinkle the potato slices with salt and your choice of seasonings, if desired.
