Easy Mediterranean Baked Fish

Ingredients

  • 2 fish fillets (cod, tilapia, sea bass, snapper, or haddock)

  • 1½ cups cherry tomatoes

  • ½ cup green or mixed olives (pitted)

  • 3 cloves garlic (minced)

  • 3 tbsp olive oil

  • 1 lemon (sliced or juiced)

  • 1 tsp dried oregano

  • ½ tsp paprika

  • ½ tsp black pepper

  • Salt to taste

  • Fresh herbs (parsley, thyme, or rosemary – optional)


Instructions

  1. Preheat oven to 400°F (200°C).

  2. Prepare baking dish:
    Drizzle olive oil in a baking dish. Add cherry tomatoes, olives, and garlic. Toss gently.

  3. Season fish:
    Pat fish dry. Season both sides with salt, pepper, paprika, and oregano.

  4. Assemble:
    Place fish on top of the tomato-olive mixture. Drizzle with remaining olive oil and lemon juice. Add lemon slices and fresh herbs if using.

  5. Bake uncovered for 15–20 minutes, until fish is opaque and flakes easily with a fork.

  6. Optional finish:
    Broil for 2–3 minutes for extra color.


Serving Ideas

  • Serve with rice, couscous, or roasted potatoes

  • Great with crusty bread or a simple salad
