Easy Mediterranean Baked Fish
Ingredients

2 fish fillets (cod, tilapia, sea bass, snapper, or haddock)

1½ cups cherry tomatoes

½ cup green or mixed olives (pitted)

3 cloves garlic (minced)

3 tbsp olive oil
-
1 lemon (sliced or juiced)

1 tsp dried oregano
-
½ tsp paprika
-
½ tsp black pepper
-
Salt to taste

Fresh herbs (parsley, thyme, or rosemary – optional)
Instructions

Preheat oven to 400°F (200°C).

Prepare baking dish:
Drizzle olive oil in a baking dish. Add cherry tomatoes, olives, and garlic. Toss gently. -
Season fish:
Pat fish dry. Season both sides with salt, pepper, paprika, and oregano. -
Assemble:
Place fish on top of the tomato-olive mixture. Drizzle with remaining olive oil and lemon juice. Add lemon slices and fresh herbs if using. -
Bake uncovered for 15–20 minutes, until fish is opaque and flakes easily with a fork.

Optional finish:
Broil for 2–3 minutes for extra color.
