Ingredients
-
Main Vegetables:
-
1 medium head of cauliflower, cut into bite-sized florets
-
8 oz cremini or button mushrooms, sliced
-
1 tablespoon olive oil
-
-
Garlic Butter Sauce:
-
2 tablespoons unsalted butter
-
3 cloves garlic, minced
-
1 tablespoon soy sauce or tamari (optional, for depth of flavor)
-
-
Seasonings & Garnish:
-
1/2 teaspoon dried thyme or Italian seasoning
-
Salt and freshly ground black pepper, to taste
-
Fresh chopped parsley, for garnish
-
Instructions
-
Sauté the Mushrooms: Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the sliced mushrooms in a single layer and cook without stirring for 3 to 4 minutes to get a nice golden sear. Stir and cook for another 2 minutes until tender, then remove them from the skillet and set aside.
-
Cook the Cauliflower: In the same skillet, add the remaining 1 tablespoon of butter. Add the cauliflower florets and toss to coat. Season with salt, pepper, and thyme. Pour in 2 tablespoons of water, cover the skillet with a lid, and let it steam-sauté for 5 to 7 minutes until the cauliflower is fork-tender.
-
Combine and Add Garlic: Remove the lid and let any excess moisture evaporate. Return the cooked mushrooms to the skillet with the cauliflower.
-
Add Garlic and Seasoning: Add the minced garlic and soy sauce (if using) directly into the center of the pan. Sauté everything together, tossing constantly for 1 to 2 minutes until the garlic is fragrant and the vegetables are well-coated in the garlic butter.
-
Serve: Taste and adjust seasoning with extra salt and pepper if needed. Garnish with fresh chopped parsley and serve warm.
