Ingredients

  • Chicken: 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

  • Vegetables: 4 cups green cabbage (chopped or shredded), 1 medium onion (sliced), and 3-4 cloves of garlic (minced)

  • Sauce: 3 tablespoons soy sauce or tamari, 1 tablespoon sesame oil, and 1 tablespoon rice vinegar

  • Aromatics & Extras: 1 tablespoon fresh ginger (minced) and chopped green onions for garnish

  • Cooking Oil: 1-2 tablespoons oil for the pan

Step-by-Step Instructions

  1. Cook the Chicken: Heat a tablespoon of oil in a large skillet or wok over medium-high heat. Add the bite-sized chicken pieces and cook until browned and fully cooked through. Remove the chicken from the skillet and set aside.

  2. Sauté the Aromatics and Cabbage: In the same skillet, add a bit more oil if needed. Toss in the sliced onions, minced garlic, and ginger, sautéing for about 1 to 2 minutes until fragrant. Add the chopped cabbage and stir-fry for 4 to 5 minutes until it begins to soften and wilt.

  3. Combine and Sauce: Return the cooked chicken to the skillet with the cabbage. Pour the soy sauce, sesame oil, and rice vinegar over the mixture, tossing everything together well to coat. Cook for an additional 2 minutes until hot and flavorful.

  4. Garnish and Serve: Remove from heat, garnish with fresh green onions, and serve warm.
