Ingredients:
- 4 large potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon nutmeg (optional)
- 1/4 cup vegetable oil (for frying)
- Applesauce and sour cream (for serving)
Instructions:
- Prepare Potatoes and Onion: Peel and grate the potatoes and onion. Place them in a clean kitchen towel and squeeze out as much liquid as possible.
- Mix Ingredients: In a large bowl, combine the grated potatoes and onion, eggs, flour, salt, pepper, garlic powder, and nutmeg. Mix well until all ingredients are thoroughly combined.
- Heat Oil: Heat the vegetable oil in a large skillet over medium-high heat.
- Form Pancakes: Scoop about 1/4 cup of the potato mixture and flatten it into a pancake shape. Carefully place it into the hot oil. Repeat with the remaining mixture, cooking in batches to avoid overcrowding the skillet.
- Fry Pancakes: Fry the pancakes for 3-4 minutes on each side, or until they are golden brown and crispy. Remove them from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- Serve: Serve the potato pancakes hot, with applesauce and sour cream on the side.
