Instructions
1. Make the Tzatziki Sauce:
-
In a medium bowl, combine the strained grated cucumber, Greek yogurt, minced garlic, lemon juice, fresh dill, and salt.
-
Mix well, cover, and refrigerate for at least $30$ minutes to let the flavors meld.
2. Marinate the Chicken:
-
In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper.
-
Add the chicken pieces, tossing well to ensure every piece is coated. Let marinate for at least $15$ to $30$ minutes (or up to $4$ hours in the fridge).
3. Cook the Chicken:
-
Heat a skillet or grill pan over medium-high heat with a drizzle of oil.
-
Add the chicken strips and cook for about $5$ to $7$ minutes per side, or until golden brown and cooked through ($165\text{°F}$ internal temperature).
-
Remove from heat and let rest for a few minutes before slicing or serving.
4. Warm the Flatbreads:
-
Lightly toast or grill the flatbreads or pitas on the pan for about $30$ seconds on each side until warm and soft.
5. Assemble:
-
Lay out the warm flatbreads. Layer with sliced tomatoes, red onion, and the cooked chicken.
-
Generously spoon the homemade tzatziki sauce over the top, garnish with a little extra herbs, and wrap or fold to serve!
