Ingredients
-
Chicken breasts (1 per foil packet)
-
Fresh pineapple chunks
-
Zucchini, sliced
-
Bell peppers (red or orange), chopped
-
Green onions, chopped (for garnish)
-
Sauce/Seasoning: A blend of soy sauce (or teriyaki), a touch of honey or brown sugar, garlic, olive oil, salt, and pepper.
Instructions
-
Prep the Foil Sheets: Cut four large sheets of heavy-duty aluminum foil. Lightly coat the center of each sheet with cooking spray or oil.
-
Layer the Vegetables: Create a bed of sliced zucchini and chopped bell peppers in the center of each foil piece.
-
Add the Chicken: Place a seasoned chicken breast right on top of the vegetables.
-
Top with Pineapple: Generously add fresh pineapple chunks all around and on top of the chicken.
-
Add Sauce: Drizzle your teriyaki-style sauce or seasoning mixture evenly over the chicken, pineapple, and veggies.
-
Seal the Packets: Bring the long edges of the foil up and fold them together over the top, then crimp the ends tightly to seal the packets completely while leaving a little space inside for heat circulation.
-
Cook: Bake in a preheated oven at 200°C (400°F) for about 20 to 25 minutes, or grill over medium heat until the chicken is cooked through (internal temperature reaches 74°C / 165°F).
-
Serve: Carefully open the foil packets (watch out for hot steam!), garnish with freshly chopped green onions, and enjoy straight from the foil or transferred to a plate!
