Hearty Ground Beef, Cabbage & Carrot Soup
This cozy homemade soup is packed with ground beef, tender cabbage, carrots, onions, and potatoes simmered together in a rich, savory tomato-beef broth. - 1 lb ground beef
- 1 small head green cabbage, chopped
- 3 medium carrots, sliced
- 2 medium potatoes, peeled and cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste
- 6 cups beef broth
- 1 tsp Worcestershire sauce
- 1 tsp paprika
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp salt, or to taste
- 1 tbsp olive oil, if needed
- Fresh parsley for garnish

- Brown the beef:
Add ground beef to a large pot over medium-high heat. Cook until browned, breaking it apart with a spoon. Drain excess grease if necessary. - Add aromatics:
Add onion and cook for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds. - Build the soup:
Add tomato paste, diced tomatoes, beef broth, Worcestershire sauce, paprika, thyme, parsley, black pepper, and salt. Stir well. - Add vegetables:
Stir in the cabbage, carrots, and potatoes. - Simmer:
