Ingredients
- 1 cup nonfat or low-fat Greek yogurt
- ½ cup low-fat cottage cheese
- 1 scoop vanilla protein powder
- ½ cup mixed berries, fresh or frozen
- 2 tbsp sugar-free cheesecake pudding mix
- 1–2 tbsp zero-calorie sweetener, to taste
- ½ tsp vanilla extract
- 1–2 tbsp unsweetened almond milk, if needed
- 2 tbsp light whipped topping, optional
- Fresh blueberries and strawberries, for topping
- Crushed graham crackers, optional
Instructions
- Add the Greek yogurt, cottage cheese, vanilla protein powder, cheesecake pudding mix, sweetener, and vanilla extract to a blender or food processor.
- Blend until completely smooth and creamy.
- Add the mixed berries and blend briefly until the berries are incorporated. For a swirl effect, pulse only a few times.
- If the mixture is too thick, add almond milk 1 tablespoon at a time until you reach a fluffy, mousse-like consistency.
- Divide the mixture between 3–4 small dessert cups.
- Refrigerate for at least 30–60 minutes to allow the fluff to thicken and chill.
- Top with fresh berries, a small spoonful of light whipped topping, and a sprinkle of crushed graham crackers if desired.
- Serve chilled and enjoy!
