Ingredients:
For Filling:
- 1 heaping cup of sliced apples (I cored and quartered and then sliced)
- 1/4 teaspoon cinnamon
For Cake:
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/2 cup plain non-fat Greek yogurt
- 1/3 cup granulated sugar or a sugar substitute suitable for baking
- 1/3 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened almond milk or any other milk of choice
For Topping:
- 2 tablespoons melted butter (or a light butter alternative)
- 1/3 cup granulated sugar or a sugar substitute suitable for baking
- 1 teaspoon ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a small bowl, combine the sliced apples with 1/4 teaspoon of cinnamon. Set aside.
- In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
- In a large bowl, beat together the applesauce, Greek yogurt, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk. Mix until just combined.
- Spread half of the batter into the prepared baking pan. Layer the apple slices on top, and then spread the remaining batter over the apples.
- In a small bowl, mix together the melted butter, granulated sugar, and ground cinnamon for the topping. Drizzle this mixture over the batter.
- Use a knife to swirl the topping into the batter.
- Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before slicing and serving.
