Homemade Limoncello
Description

Ingredients

10 to 12 organic lemons (thick-skinned, washed and dried)

750 ml high-proof neutral spirit (such as Everclear, vodka, or grain alcohol)

3 cups granulated sugar

3 cups water
Instructions

Zest the Lemons: Using a vegetable peeler, carefully remove the yellow zest from the lemons, avoiding the bitter white pith underneath.

Infuse the Alcohol: Place the lemon peels in a large glass jar and pour the neutral spirit or vodka over them. Seal tightly and let steep in a cool, dark place for 1 to 4 weeks to extract the essential oils.

Make the Simple Syrup: In a saucepan, combine the water and sugar. Heat gently until the sugar is completely dissolved, then let it cool to room temperature.

Combine and Strain: Strain the lemon peels out of the infused alcohol. Mix the infused alcohol with the cooled simple syrup.

Bottle and Chill: Pour the limoncello into clean glass bottles and store them in the freezer. Serve ice-cold as a refreshing after-dinner digestif.
