Ingredients
-
1 lb ground beef
-
1 medium yellow onion, diced
-
2 cloves garlic, minced
-
3 cups beef broth
-
1 can (14.5 oz) diced tomatoes, undrained
-
1 ½ cups heavy whipping cream
-
2 cups sharp cheddar cheese, freshly shredded
-
2 tbsp butter or olive oil
-
1 tsp Italian seasoning or dried parsley
-
Salt and freshly ground black pepper, to taste
-
Fresh parsley or chives, chopped for garnish
Instructions
-
Brown the Beef: In a large soup pot or Dutch oven over medium heat, cook the ground beef and diced onion until the beef is completely browned and the onions are soft (about 6–8 minutes). Drain any excess grease.
-
Add Garlic & Spices: Stir in the minced garlic and Italian seasoning, cooking for about 1 minute until fragrant.
-
Simmer: Pour in the beef broth and the undrained diced tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes so the flavors meld.
-
Add Cream: Lower the heat and stir in the heavy whipping cream. Let it warm through for 3–5 minutes without letting it boil.
-
Melt the Cheese: Turn off the heat and gradually add the shredded cheddar cheese, stirring constantly until completely melted and the soup is smooth and creamy. Season with salt and pepper to taste.
-
Serve: Ladle into bowls, garnish with freshly chopped parsley, and enjoy!
