Low-Point Fresh Apple Oatmeal Cookies

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar or a sugar substitute suitable for baking
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated apple (about 1 medium-sized apple)
  • 1/2 cup raisins or dried cranberries (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt. Set aside.
  3. In another bowl, combine applesauce, melted coconut oil, brown sugar, granulated sugar (or sugar substitute), egg, and vanilla extract. Mix until well combined.
  4. Add the grated apple to the wet ingredients and stir to combine.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in raisins or dried cranberries and chopped nuts.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown. Keep an eye on them as baking times can vary.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
