  • 1 box (approx. 15.25 oz) zero sugar cake mix
  • 3 large eggs
  • 1 cup unsweetened applesauce
  • 1 box (approx. 3 oz) strawberry-flavored gelatin (Jello)
  • 1 container (8 oz) sugar-free Cool Whip
  • 1 lb fresh strawberries, hulled and sliced

  1. Preheat your oven according to the instructions on the cake mix box.
  2. In a large mixing bowl, combine the cake mix, eggs, and unsweetened applesauce. Mix until well combined and smooth.
  3. Grease and flour a 9×13 inch baking pan or dish.
  4. Pour the cake batter into the prepared pan and smooth the top with a spatula.
  5. Bake the cake according to the instructions on the cake mix box, until a toothpick inserted into the center comes out clean.
  6. Once baked, remove the cake from the oven and allow it to cool slightly in the pan.
  7. While the cake is still warm, use the handle of a wooden spoon or a fork to poke holes all over the surface of the cake.
  8. In a separate bowl, prepare the strawberry-flavored gelatin (Jello) according to the instructions on the package.
  9. Carefully pour the prepared gelatin over the warm cake, ensuring that it seeps into the holes and covers the entire surface.
  10. Place the cake in the refrigerator and chill for at least 2 hours, or until the gelatin is set.
  11. Once chilled, spread the sugar-free Cool Whip over the top of the cake, using a spatula to smooth it out evenly.
  12. Arrange the sliced strawberries on top of the Cool Whip.
  13. Slice the cake into 20 servings and serve chilled.
