Description

These are golden-brown Mini Banana Bread Loaves (or mini cake/bread bites) baked in a silicone mold. They are perfectly portioned, soft on the inside with a slight crust on the outside, and easy to pop right out of the mold for a quick snack or breakfast treat.

📝 Ingredients

  • Ripe Bananas: 2–3 medium bananas (mashed)

  • Flour: 1.5 cups all-purpose flour

  • Sugar: 1/2 cup granulated sugar (or brown sugar)

  • Butter or Oil: 1/3 cup melted butter or vegetable oil

  • Egg: 1 large egg

  • Leavening & Seasoning: 1 tsp baking soda, a pinch of salt, and 1 tsp vanilla extract

👩‍🍳 Step-by-Step Instructions

  1. Prep and Preheat: Preheat your oven to 350°F (175°C). Lightly grease your silicone mini-loaf mold with cooking spray or butter.

  2. Mix Wet Ingredients: In a large bowl, mash the ripe bananas, then mix in the melted butter (or oil), sugar, egg, and vanilla extract until smooth.

  3. Add Dry Ingredients: Gently stir in the flour, baking soda, and salt just until combined (do not overmix).

  4. Fill the Mold: Spoon the batter evenly into the compartments of the silicone mold.

  5. Bake: Bake for about 15 to 20 minutes, or until a toothpick inserted into the center of a mini loaf comes out clean.
