Ingredients

  • For the Cake:

    • 2 cups grated carrots (finely shredded)

    • 1 cup almond flour (or fine oat flour)

    • 1/2 cup unsweetened applesauce

    • 3 large eggs

    • 1/3 cup pure maple syrup, honey, or a natural sweetener (like erythritol or monk fruit)

    • 1/4 cup coconut oil, melted

    • 1 tsp vanilla extract

    • 1.5 tsp ground cinnamon

    • 1/4 tsp ground nutmeg

    • 1.5 tsp baking powder

    • 1/4 tsp salt

    • 1/2 cup chopped walnuts or pecans (plus extra for topping)

  • For the Filling / Frosting (Optional):

    • 1 cup cream cheese (softened) or thick Greek yogurt

    • 2 tbsp maple syrup or honey

    • 1 tsp vanilla extract

Instructions

  1. Preheat & Prep: Preheat your oven to 180°C (350°F). Line a round cake pan or loaf pan with parchment paper and lightly grease it.

  2. Mix Wet Ingredients: In a large bowl, whisk together the eggs, unsweetened applesauce, maple syrup (or sweetener), melted coconut oil, and vanilla extract until smooth.

  3. Add Spices & Carrots: Stir in the finely grated carrots, ground cinnamon, ground nutmeg, and salt.

  4. Incorporate Dry Ingredients: Add the almond flour and baking powder to the wet mixture. Stir gently until a cohesive batter forms. Fold in half of the chopped walnuts or pecans.

  5. Bake: Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining chopped nuts over the surface. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool & Assemble (Optional): Let the cake cool completely in the pan before slicing. If desired, carefully slice the cake horizontally through the middle to create a layer and spread the cream cheese filling in the center, or simply enjoy it as a rustic snack cake!
