Description
This healthier twist on a classic bakery favorite swaps out refined white flour and processed sugars for wholesome, nutrient-dense ingredients. Naturally sweetened with applesauce (and sometimes a touch of honey, maple syrup, or dates), and baked using fine almond flour instead of wheat, it yields a delightfully moist, spiced cake loaded with grated carrots and chopped nuts. Topped with a luscious glaze or cream cheese filling, it is a guilt-free indulgence that satisfies your sweet tooth while fitting clean-eating or low-carb lifestyles.

1 tsp vanilla extract
-
1.5 tsp ground cinnamon

1/2 cup chopped walnuts or pecans (plus extra for topping)

For the Filling / Frosting (Optional):
-
1 cup cream cheese (softened) or thick Greek yogurt
-
2 tbsp maple syrup or honey
-
1 tsp vanilla extract
-
Instructions
-
Preheat & Prep: Preheat your oven to 180°C (350°F). Line a round cake pan or loaf pan with parchment paper and lightly grease it.
-
Mix Wet Ingredients: In a large bowl, whisk together the eggs, unsweetened applesauce, maple syrup (or sweetener), melted coconut oil, and vanilla extract until smooth.
-
Add Spices & Carrots: Stir in the finely grated carrots, ground cinnamon, ground nutmeg, and salt.
-
Incorporate Dry Ingredients: Add the almond flour and baking powder to the wet mixture. Stir gently until a cohesive batter forms. Fold in half of the chopped walnuts or pecans.
-
Bake: Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining chopped nuts over the surface. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
-
Cool & Assemble (Optional): Let the cake cool completely in the pan before slicing. If desired, carefully slice the cake horizontally through the middle to create a layer and spread the cream cheese filling in the center, or simply enjoy it as a rustic snack cake!
