Potato Fritters

Ingredients:

  • 4 medium potatoes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Prepare the Potatoes:
    • Peel and grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
  2. Mix the Ingredients:
    • In a large bowl, combine the grated potatoes, chopped onion, minced garlic, parsley, eggs, flour, and Parmesan cheese. Mix well. Season with salt and pepper to taste.
  3. Heat the Oil:
    • Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
  4. Form the Fritters:
    • Scoop about 1/4 cup of the potato mixture and shape it into a patty. Carefully place the patty into the hot oil. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
  5. Fry the Fritters:
    • Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.
  6. Drain and Serve:
    • Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
  7. Enjoy:
    • Serve the potato fritters hot, garnished with additional parsley if desired. They can be served with a dipping sauce such as sour cream or a spicy mayo.
