Peel and grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
Mix the Ingredients:
In a large bowl, combine the grated potatoes, chopped onion, minced garlic, parsley, eggs, flour, and Parmesan cheese. Mix well. Season with salt and pepper to taste.
Heat the Oil:
Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
Form the Fritters:
Scoop about 1/4 cup of the potato mixture and shape it into a patty. Carefully place the patty into the hot oil. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
Fry the Fritters:
Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.
Drain and Serve:
Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Enjoy:
Serve the potato fritters hot, garnished with additional parsley if desired. They can be served with a dipping sauce such as sour cream or a spicy mayo.
