Ingredients:
- 4 medium potatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 2 eggs
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- Prepare the Potatoes:
- Peel and grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
- Mix the Ingredients:
- In a large bowl, combine the grated potatoes, chopped onion, minced garlic, parsley, eggs, flour, and Parmesan cheese. Mix well. Season with salt and pepper to taste.
- Heat the Oil:
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
- Form the Fritters:
- Scoop about 1/4 cup of the potato mixture and shape it into a patty. Carefully place the patty into the hot oil. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
- Fry the Fritters:
- Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.
- Drain and Serve:
- Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- Enjoy:
- Serve the potato fritters hot, garnished with additional parsley if desired. They can be served with a dipping sauce such as sour cream or a spicy mayo.
